Thai Green Curry With Vegetables

A famous dish from Thailand - mixed vegetables the green curry pasteCooking time :20-30 minutes

• cauliflower, divided into florets 1/2 small

• Baby brinjals2 3

• diced 1 medium-sized potato,

• lemon grass stalk

• 1 teaspoon lemon juice

• Salt

• fresh coconut milk 3/4 cup

• Fresh basil leaves 2-3

• For the green curry paste

• Green pepper 10

• shallots 3

• garlic cloves

• galangal 1 inch

• 3-inch piece lemon grass

• lemon peel, grated 1/4 tsp

• parsley root a small bunch of flowers

• 2 teaspoons coriander seeds

• 2 teaspoon cumin

• Salt

 Method
To make the green curry paste, grinding green pepper, onion, garlic, galangal, lemon grass, lemon peel, coriander root, coriander seeds, cumin and salt fine paste. Blanch all the vegetables. Lemon grass tied in muslin cloth bundle. Slightly crushed.

 Heat a non-stick pan, add the green curry sauce and baked for one minute. Add peeling vegetables, lemon juice, and cook for three to four minutes, stirring constantly. Add three cups of water and continue to cook. Lemon grass beam, and cook for three to four minutes, until giving the taste of lemon grass. Remove the bag, and add salt and coconut milk. Simmer for a minute. Add the basil leaves and take off the heat. Serve warm.
